Matzah
Cake
Nissan is here and the pre-Passover excitement is
shifting into a higher gear. One of my favorite Passover
traditions is making my mother's delicious Matzah
Cake. It is so easy to make, yet it's always the highlight
of the Seder as well as many Passover Family Education
Workshops I've conducted through the years. I'm sending
you this recipe with the hopes that you and your family
will enjoy this wonderful Hackmon Family tradition.

now for this month's special gift:
Chocolate
Matzah Cake
(Makes one 10-layer or two 5-layer Matzah cakes)
Syrup
2 sticks margarine* (left at room temperature for
several hours)
3/4 cup cocoa
2 eggs
2 teaspoons rum flavoring (or brandy)
2 cups sugar
Cake
1 box Matzah
1-quart liquid (choose from: milk*, water, wine, orange
juice or grape juice)
Multicolored or chocolate sprinkles
Melt
margarine in small pot over low heat. Stir in sugar
until partially dissolved. Add the rest of syrup ingredients
and stir constantly until sugar is completely dissolved
and syrup thickened. Set aside and allow to cool for
a few minutes.
Place
your chosen liquid (milk, water, wine, orange juice
or grape juice) in shallow bowl that is larger than
a piece of Matzah. Soak one Matzah at a time for about
a minute and place it on a tray or cookie sheet lined
with wax or parchment paper. Using a brush or a spatula
spread approximately 6 tablespoons of the chocolate
syrup on top of Matzah. Repeat layering until syrup
is finished.
Decorate
cake top with candy sprinkles or your choice of garnish
and refrigerate for at least two hours or overnight.
Cut into squares (or any other desired shape) and
serve.
Get
plenty of compliments.
*
We substitute margarine with butter for dairy meals
and avoid milk as a choice liquid for meals with meat.
